Moonshine -An aged cow's milk cheese

Moonshine is made in the early hours of the morning when the moon is still out hence the name. It’s a mountain style cheese so we cut the curd small and heat it to above 50 ⁰C. This is one of Jack's favourite cheeses to make because it also has a long journey of maturation and is is meticulously cared for over the months is it prepared. Moonshine is washed and flipped every week to create a natural rind that is crucial for the development of texture and flavour.
